Smooth, herbal and almost sweet, Lucy’s wild salmiana expression is aromatic and fragrant with notes of cacti, herbs, citrus and spices used in Mexican kitchens. As a wild agave, salmiana can grow to maturity in 10 to 12 years; more than a decade of withstanding the harshest conditions in the mountains, not only surviving but THRIVING at an average altitude of 2,000 meters above sea level (6,600 feet).
