Conrad Seipp, a German immigrant, founded one of Chicago’s first breweries in 1854. Following the Chicago Fire of 1871, Seipp’s was one of the few to survive and his beer became the drink of choice for workers as they rebuilt the great American city. By the mid-1870s, the Conrad Seipp Brewing Company was a dominant player in the U.S. brewing industry and, by the turn of the century, the brewery was producing over 250,000 barrels annually. As with so many American breweries, Seipp was unable to survive the impact of WWI and Prohibition. The brewery closed its doors in 1933 and was demolished to make way for Michael Reese Hospital.
Seipp’s beer was Chicago’s beer. The Conrad Seipp Brewing Company tells the story of the city’s history: the hope of immigrants, the respect of hard work, and the desire to innovate. Pride in Seipp’s beer has remained strong in our family over the last 150 years and we are honored to work with Metropolitan Brewing to bring it back to the place he loved.
