How did a tropical bird from the Amazon get to the hail-bitten capital of Ireland? Guinness ads from the thirties and forties featured a toucan balancing a pint of the dry Irish stout on its beak like it made some kind of sense or something. It was cute. It was disarming. But it didn’t make any sense. Likewise, it doesn’t make any sense to brew an Irish stout today without revisiting the brand that still casts the longest shadow in that corner of the beer style spectrum.
