Beer Description
Enough of our O.G. customers had been asking for us to brew up a batch of the original Saint Thomas with our old house yeast, so to show our appreciation to them, we made it happen and have continued to make it happen, as it might be one of our favorite beers we make. Fermented with the most classic Westcoast yeast there is, the O.G. Saint Thomas is shockingly similar to its namesake; just as juicy and tropical and soft on the palate, but comes out near crystal clear, a bit drier, and lighter in body, while still being what we consider the quintessential Mosaic IPA. Flavor profiles are nearly identical, with a slightly brighter overall character on the O.G. with notes of white grapefruit, passionfruit, honeydew, ripe citrus, blueberries, and hints of pineapple juice that dominate the palate. While a parent is never supposed to admit to having a favorite child, we need zero time to choose Saint Thomas O.G. as our favorite of all the Tommys.
