Always enchanting when fireflies light up the orchard on a summer night. New York Cider Company’s big, bright FIREFLY #4 blend reminds us of those magical evenings in the Finger Lakes. A spontaneous fermentation of heirlooms, including Golden Russets, Roxbury Russets, Newtown Pippins, Tolman Sweets, and Smith’s Ciders—not to mention foraged wild apples—imbues Firefly with a dry, tangy, funky character. We like to call it a “gentle sour.” Which means a palate-awakening lactic zing is coming your way. Enjoy cool. (Fireflies usually abound at our Ithaca, NY, farm. However, likely due to light pollution and human encroachment on habitat, these exciting beetles are threatened in the US and around the world
