Beer Description
A blend of three barrel aged wilds: a funky saison aged in a Sangiovese puncheon with Rangpur limes, a foedre aged wild ale finished in a Caledonia Spirits Tom Cat style gin barrel hand selected by the Publican, and lastly, a third wild ale aged in a FEW gin barrel. Bright, sparkling citrus with a deep, herbal spiced nose, mild acidity, with the Sangiovese puncheon contributing red wine spritz-like notes of black cherry and dried cranberry, all bookended by lingering juniper and tannin from extended aging in gin barrels.
