This cider has subtle dried stone fruit on the palate, a light yeasty complexity, fine mousse and crisp finish.
Fruit for this cider came from the first harvest in 2017 at the historic Esopus orchards, where the cider makers have been following organic, biointensive and biodymanic practices to bring back the 900+ trees there, some of which are 125 years old. This cider has subtle dried stone fruit on the palate, a light yeasty complexity, fine mousse and crisp finish.
