Pleasant acidity, crisp body, aromatic complexity and fruitiness integrated through fermentation thoroughly enough to be both subtle and persistent: notions, rather than flavors. This content to be pleasing rather than over blown is entirely captured in the Swedish notion of lagom. With Lagom we look to structure that Scandia feeling of all being well and satisfied on a cool evening by a fire with bright flavors in your head by pushing Highlander Weiss way up north with sea buckthorn and licorice.
