Pinkish tinged and funk forward, juxtaposing the softness of the honeys with a complex acid profile with the lactic hues of our house lactobacillus.
Ok, maybe Danish Style American Wild Ale doesn’t really mean anything but then again at a certain point styles are silly anyway since beer is moving too fast for styles to keep up. Supposed technically this would be a wild biere de miel at heart. Whatever it is we made it with Amager Bryghus; good friends of ours who have a little brewery just outside of Copenhagen. Every time we work together it’s pretty much just me asking if they have such and such in Denmark. And then they look annoyed and say yes. S’mores? Yes. Cranberries? Yes. And yes, I asked. They have cats in Denmark.
